Ingredients
- 2 lbs yellow crook neck squash
- 1/4 cups chopped onion
- 3 eggs
- 1/2 tsp garlic salt
- 1/4 cu parmesan cheese
- 3/4 cup flour (self rising)
- 1/4 cup oil

Preparation
Step 1
Boil squash till tender. Drain and place in large bowl. Add onion, eggs, garlic salt and cheese. Mash all ingredients together until most of the lumps are gone.
Slowly beat in the flour with a fork. You should have a mixture like pancake batter.
Heat oil in 12 inch skillet. Drop batter by large T. into hot oil and flr until golden brown on one side. Turn over and fry the other side until brown. Turn onto plate lined with paper towels and serve hot. patties can be kept warm in a 200 degree oven until serving time .
