Grilled Chicken with Balsamic Peach Sauce

Ingredients
- 1/2 cup balsamic vinegar
- 1/4 cup peach perserves
- 1/4 tsp salt and pepper
- 3-4 cloves minced garlic
- 2 tbls. fresh basil, chopped or 1 tsp dried
- 2 or 3 tbls.EVOO
- 4 skinless bonless chicken breasts
- 2-3 firm peaches, cut into 1/4 inch slices

Preparation
Step 1
In a sauce pan over medium heat bring the vinegar to a boil.
Reduce heat and simmer till vinegar is reduced by half.
Stir in peach perserves and remove from heat.
Combine the garlic, basil, EVOO and rub each chicken piece with the mix.
Place on a hot grill or grill pan which has been sprayed with canola oil.
Baste each piece with the vinegar glaze.
Cook each side and continue to baste with the glaze until the chicken is
Cooked through. Remove chicken to a plate and keep warm.
Place peach slices on hot grill and brush with glaze. Grill and baste each side for 2 minutes.
Serve over warm chicken breasts.
