  • 1 lg. can black beans, rinsed and drained
  • 1/2 red onion, diced
  • 2 cobs of corn, cooked and taken of cob
  • 2 mangos, diced
  • 1 avocado, diced
  • 3/4 cup cilantro, leaves torn
  • 2 limes, juiced
  • 1/4 cup olive oil
  • salt and pepper, to taste

Step 1

Combine all ingredients in a large bowl. Toss to mix and enjoy. You can allow flavors to blend at room temp. for up to one hour.
