Ingredients
- 3 large green tomatoes
- 1/3 cup flour
- 2 beaten eggs
- 1/2 cup cornmeal
- 2 T Parmesan cheese
- 1/8 cayenne
- 3/4 tsp salt
- 1/8 tsp black pepper

Preparation
Step 1
Core tomatoes; slice 3/4 inch thick. Drain slightly; season each with a pinch of salt. Place 1/3 cup flour in shallow bowl; 2 beaten eggs in a second; and 1/2 cup cornmeal, 2 T Parmesan, 1/8 tsp cayenne, 3/4 tsp salt and 1/8 tsp pepper in a third. Dredge slices in flour, then eggs, then cornmeal; fry in vegetable oil over medium heat about 3 minutes per side or until golden.
