Ingredients
- SPINACH BALLS:
- 2 boxes chopped frozen spinach, drained
- 2 cups stuffing mix (Stove Top chicken flavoured)
- 1 large onion, chopped fine
- 4 beaten eggs
- 3/4 cup melted butter
- 1/2 cup grated parmesan cheese
- 1/2 tbsp garlic salt
- 1/2 tsp seasoned salt
- 1/4 tsp thyme
- MUSTARD DIPPING SAUCE:
- 1/2 cup ground mustard (this is about the entire large container found in the spice aisle)
- 1/2 cup white vinegar
- 1/2 cup sugar
- 1 beaten egg

Step 1
For the Spinach Balls. Mix all ingredients together and put in refrigerator for 1 hour. Roll into little balls and cook for 25 minutes at 350 degrees or freeze ahead for the party.
For the Mustard Dipping Sauce. Whisk all ingredients and transfer to a small saucepan. Bring just to a boil whisking the entire time. Can be served warm or room temperature.
