Ingredients

    C all-purpose flour

  • 1

    C sugar

  • 1 1/2

    tsp baking soda

  • 1

    tsp ground cinnamon

  • 1/2

    tsp salt

  • 1/4

    tsp ground allspice

  • 1/4

    tsp ground cloves

  • 1/4

    C golden raisins

  • 1

    C peeled, cooked and mashed sweet potatoes

  • 1

    C buttermilk

  • 1/2

    C egg substitute

  • 1/4

    C safflower oil

Directions

Preheat oven to 350*. Oil a 9x5 inch pan. In a large bowl, combine flour, sugar, baking soda, cinnamon, salt, allspice and cloves. Stir in raisins. In a medium bowl, combine potatoes, buttermilk, egg substitute and safflower oil. Add sweet potato mixture to flour mixture; stir just until combined.Pour into prepared pan. Bake until toothpick inserted in center comes out clean, 55-60 minutes. Cool on a wore rack for 15 minutes before removing from pan.
