Pork and White Bean Chili

  • 2 T olive oil, divided
  • 1 lb boneless pork loin, cut into 1 in cubes
  • 2 c chopped onions
  • 2 T chili powder
  • 1 1/2 t ancho chile pepper
  • 1 t ground cumin
  • 1 t garlic powder
  • 1 t Mexican oregano leaves
  • 2 cans 15oz each cannellini beans, drained and rinsed
  • 1 can chicken broth
  • 1 avocado, peeled, pitted and coarsley chopped
  • 2 T chopped fresh cilantro
  • 2 T fresh lime juice


Preparation time 10mins
Cooking time 30mins


Step 1

Heat 1 T oil in large skillet on m ed high heat. Add 1/2 of pork, brown on all sides. Remove pork from skillet. Repeat with remaining pork, adding additional oil as needed.

Stir onions into skillet and cook 4 min until tender. Add seasonings, cook and stir 1 min or until fragrant. Add pork, beans and broth, mix well. Bring to a boil and reduce heat to low. Simmer uncovred 15-20 min or until pork is tender, stirring occasionally.

Mix avocado, cilantro and lime juice in small bowl. Serve chili topped with avocado mixture.
