Rice with Mango and Coconut Milk

Ingredients
- 1 T olive oil
- 1 1/2 C long grain rice
- 1 (14oz) can unsweetened coconut milk
- 2/3 C water
- 1 t salt
- 1 large ripe mango, peeled and cubed

Preparation
Step 1
In a large sauce pan, heat oil over med high heat. Add the rice and stir to coat with oil. Add the coconut milk, water and salt. Bring to boil. Stir in mango. Cover, reduce heat to low and simmer about 20 min untl liquid is absorbed and rice is soft.
Remove rice from heat and fluff with fork. Cover with clean, dry dish cloth and a lid and let steam for 5 min before serving.
