Rhubarb Upside Down Cake

A nice twist to an upside down cake using rhubarb.

Ingredients

  • 1 yellow cake mix using the directions on the box
  • 2 c rhubarb, sliced
  • 2 c sugar
  • 1 small carton whipped cream, unwhipped

Preparation

Step 1

Prepare cake mix and put in a 9 x 13 pan. Mix the rhubarb with the sugar and put on top of the cake mix. Pour the unwhipped whipping cream over the top of this and bake at 350 for 50 minutes. As soon as the cake is done take it out of the oven and tip it upside down on another dish.
Tip: My mom added one more cup of rhubarb and cut the sugar back to 1 1/2 c.
