WINE POACHED PEARS

Ingredients
- 1 c. dry white wine
- 1/3 c. cream sherry
- 3 T. sugar
- 3 " cinnamon stick, broken in two
- 1/4 tsp. ground ginger
- 1 1/2 tsp. grated orange zest
- 3 Bosc pears, ripe but firm, peeled

Preparation
Step 1
Combine .everything but pears in cooker. Bring to boil; stir to blend. Simmer 1 minute. Carefully drop a steaming rack into place, Trim bottoms of pears to stand upright on rack. Lock lid in place and, over high heat, bring to high pressure. Adjust heat to
maintain high pressure and cook one minute. Quick, release pressure. Remove lid, tilting pot away from you as steam escapes. If pears are not easily pierced with a fork, replace lid and let cook in residual •heat for another minute or two. Remove pears and slice
each in half lengthwise; arrange on serving platter. Remove steaming rack and discard cinnamon. Pour sauce over pears; serve warm or at room temperature.
