- 1 BULB FENNEL, SHAVED THIN
- 1 CUCUMBER, JULIENNED
- 1 RED PEPPER, JULIENNED
- 1/4 CUP LEMON THYME VINAIGRETTE (see recipe)
- 1 TBSP ITALIAN PARSLEY, CHOPPED
- SALT AND PEPPER
- 3/4 CUP EXTRA VIRGIN OLIVE OIL
- 1/4 CUP LEMON JUICE
- 1/4 TSP CHOPPED FRESH THYME
- 1/4 TSP CHOPPED SHALLOTS
- S& P
- WHISK ALL INGREDIENTS TOGETHER
