Ingredients
- 6 med. potatoes - 2 lbs.
- 1 cup thinly sliced celery
- 1/2 cup finely chopped onion
- 1/3 cup chopped sweet pickle
- 1 1/4 cup mayo or salad dressing
- 2 tsp. sugar
- 2 tsp. celery seed
- 2 tsp. vinegar
- 2 tsp. prepared mustard
- 1 1/2 tsp. salt
- 2 hard-cooked eggs, coarsley chopped

Step 1
In a covered saucepan cook potatoes until tender, 25-30 min. Drain - peel (if desired) and cube.Transfer to large bowl and add celery, onion, pickle. Combine mayo thru salt and add to potatoes, tossing lightly. Carefully fold in chopped eggs. Cover and chill thoroughly. Makes 8 servings.
