Creamy Orzo with Sauteed Spinach

Ingredients
- 1 cup dry orzo pasta (or other small shape), drained but not rinsed
- 1/4 cup Parmesan cheese, grated
- 1 egg, beaten
- 2 T. heavy cream
- Salt and pepper to taste
- Sauteed Spinach
- GARNISH WITH (OPTIONAL)
- Parmesan cheese, grated

Preparation
Step 1
Cook pasta according to package directions; drain but do not rinse.
Combine Parmesan, egg, heavy cream, salt, and pepper in a small mixing bowl while pasta cooks. Stir egg mixture into drained, hot pasta. Cover to keep warm and set aside. Prepare sauteed spinach, vinegar in the final step. Transfer pasta to a platter or divide among serving bowls. Top with the sauteed spinach. Garnish each portion with Parmesan cheese, if desired, and serve immediately.
