Grilled Chicken with Sun Dried Tomato Salsa

Ingredients

  • 1 (10-oz.) jar sun dried tomatoes packed in olive oil
  • 2 green onions, sliced
  • 1 tbsp. minced Italian parsley
  • 2 tsp. drained capers
  • 1 clove garlic, minced
  • Grated peel and juice of 1 lemon
  • Dried red pepper flakes
  • 3 lb. chicken breasts and thighs
  • Goat cheese, optional

Preparation

Step 1

Drain tomatoes, reserving oil. Chop tomatoes. and combine in bowl with ween onions, parsley, capers, garlic and lemon peel and juice. Season to taste with pepper flakes. Set salsa aside.

Brush chicken pieces with reserved tomato oil. Grill over medium-hot coals, skin-side down, 15 minutes. Turn, brush with oil again, and grill 15-20 minutes longer or until just cooked through.

Serve topped with salsa. Crumble goat cheese over each serving.
