Steak Garlic and Balsamic Grilled Tri-Tip

  • 1/4 cup chopped garlic
  • 1 large chopped shallot
  • 2 teaspoons kosher salt
  • 1 teaspoon paprika
  • 1/4 teaspoon pepper
  • 2 pounds tri-tip
  • 1/4 cup balsamic vinegar
  • wood chips



Step 1

Blend garlic, shallot, salt and paprika into a paste. Stir in pepper.
Coat tri-tip with olive oil and cover with rub. Marinate at room temperature at least 90 minutes before grilling, or cover and refrigerate overnight (bring to room temperature before grilling)
Soak 2 cups wood chips in water at least 25 minutes. Place on burners and heat on high. Sear tri-tip on high heat 2 minutes on each side. Turn burners on high medium and low, moving steak to back over lower heat. Baste with vinegar several times until internal temperature reaches 130 degrees fro medium-rare (about 25 total cooking time). Remove and loosely cover with foil, and let rest 15 minutes. Cut into 1/8 to ¼ inchthick slices
