Tortellini Soup

This is a recipe that I got many years ago from the grandfather of one of my piano students . I shared it with grandma, and she made it so often. Your dad said it was one of your favorites!

Ingredients

  • 2 lb. cans chicken broth (46 oz. ea.) or 12 C.
  • 5 cloves garlic
  • butter or margarine
  • 1 lg. can stewed tomatoes (or 2 reg. size cans at 14 oz. each)
  • 1 pkg. frozen spinach (thawed)-(10 oz.)
  • 2 pkg. frozen cheese tortellini (1 lb. ea.)

Preparation

Step 1

1. Thaw spinach.
2. Saute garlic in margarine till soft.
3. Add chicken broth, tomatoes, spinach & tortellini.
4. Simmer 20 min.
