Ingredients

  • 1 pound of green beans, trimmed
  • 1 pint of cherry tomatoes halved
  • 1/4 cup of Kalamata olives (I dice)
  • 1 Tbl fresh oregano
  • 2 1/2 Tbl red wine vinegar
  • 3 Tbl olive oil
  • 1/4 tsp salt
  • 1/4 tps pepper
  • 3 cloves of garlic, minced
  • 1/2 pound of shrimp or chicken- thinly sliced
  • Feta Cheese

Preparation

Step 1

1. Combine vinegar, oil, salt, pepper, garlic and oregano in a small bowl. Use 1/4 cup of the dressing as a marinade for shrimp/chicken. Refriderate for a 1/2 hour in dressing.

2. In the meantime, put green beans in a microwave safe bowl and cover- cook on high for 3 minutes. Drain any excess liquid and blanch in ice water.

3. Broil chicken/shrimp for 3 minutes or until cooked.

4. Combine beans, tomatoes, olives and reaminder of dressing. Plate on 4 plates, arranging chicken/shrimp on top. Garnish with Feta- about 2 tablesppons per plate.
