Ingredients
- 1 red bell pepper
- 2 small baguettes
- 1 avocado,sliced
- 1/2 medium red onion,sliced
- 1/2 cup lettuce,shredded
- DRESSING
- 1/2 cup mayonnaise
- 3 Tbs vinegar
- 2 Tbs sugar
- 2 Tbs water
- 2 cloves garlic,peeled and minced
- salt and pepper to taste

Preparation
Step 1
Preheat oven to 475. Place whole red bell pepper into oven and roast for 30 min,turning once(the skin of the pepper should blister and blacken)remove the pepper from the oven and transfer it to a plastic bag,Allow pepper to sweat as it cools. When the pepper is cool enough to handle,remove it from the bag. Remove and discard the stem,pith,and seeds. Peel off and discard the outer layer of the pepper.
combine all dressing ingredients and whisk until smooth.
slice open each baguette.Layer on avocado,pepper,onion and lettuce on one half of each baguette. Pour dressing over vegetables. Top with second half of baguette.
