Ingredients
- 2/3 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1 tbsp sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup shredded sharp cheddar
- 1/2 cup low-fat sour cream
- 1/4 cup thinly sliced green onions
- 1 (8 3/4 oz) can cream-style corn
- Dash of hot sauce
- 1 large egg, lightly beaten

Preparation
Step 1
Heat oven to 375. Combine flour and next 4 ingredients in a large bowl. Combine cheese and remaining ingredients in a small bowl; stir with a whisk. Add to flour mix; stir just til moistened.
Divide batter evenly among mini-muffin cups coated with cooking spray. Bake 10 minutes or til golden. Cool in pan 2 to 3 minutes.
