- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 1/2 cup mashed ripe bananas
- 2 cups of flour
- 1 t. baking soda
- 1/2 cup of pecans
Cream shortening;gradually add sugar, beat at med. speed until light and fluffy. Add eggs 1 at a time, beat well after each. Stir in banana. Combine flour and soda; add to creamed mixture, mixing well; stir in pecans.
Spoon batter into 2 greased loaf pans; 7 x 3. Bake @ 350 for 40 min.
