Emeril's creamy creole shrimp

Ingredients
- 4 T. unsalted butter
- 4 oz prosiutto, chopped
- 1/2 cup yellow onions, finely chopped
- 1/2 cup red bell peppers, finely chopped
- 1/4 cup green onions,minced
- 1/2 cup dry white wine
- 1 14.5 oz can petite diced tomatoes
- 1 cup heavy cream
- 2 1/2 lbs large shrimp , peeled and deveined
- 2 tsp emerils origianl essence
- 1/4 cup chopped fresh parsley
- grated parmesan chees

Preparation
Step 1
in a large heavy saute pan over med high heat, melt 2 T butter.. when bubbly,add prosciutto and cook til crisp about 3 min. transfer proscuitto to paper towel lined plate and set aside.. add remaing butter to pan with onion, peppers,green onion and garlic and cook for 4 min or til vegetables are slightly wilted.. add white wine and reduce by half.. add tomatoes and heavy cream and cook for another 3 min. or til sauce is thickened..
season shrimp with essence.. add shrimp to sauce and cook for another
4 min or till shrimp are just cooked thru. add parsley and reserved proscuitto, stirring til incorporated and cook 1 min longer or until prosciutto has heated through. garnish with parmesand aessence.. serve with pasta
