Lemon Pecan Popovers
Recipe from the Safeway Floor Bag
- 2 cups flour
- 1/4 cup finely chopped pecans
- 2 cups whole or low fat milk
- 4 eggs
- 1/4 tsp salt
- 2 tsp finely grated lemon peel
Place rack in lower two thirds of oven. Preheat oven to 425. In a food processor or mixing bowl with electric mixer, mix flour, pecans, milk, eggs, salt and lemon peel until well blended. Heavily butter 12 muffins cups. Fill two thirds full of batter. Bake 30 to 35 minutes or until puffed and browned. Remove popovers from tins and serve with butter or lemon honey butter.
Honey Lemon Butter
Stir 2 tbsp honey, 2 tsp lemon juice and 2 tsp grated lemon peel into 1/2 cup butter.
