This is a recipe I found the summer we were over-run by zucchini.

Ingredients

  • Crust:
  • 1-8 oz tube of crescent rolls
  • 2 ts yellow mustard
  • Filling:
  • 4 cups sliced zucchini
  • 1 cup chopped onion
  • 1/2 cup margarine
  • 1/2 cup fresh parsley(2T dried)
  • 1/2 ts salt
  • 1/2 ts pepper
  • 1/4 ts garlic powder
  • 1/4 ts dry oregano
  • 1/2 ts dry basil
  • 2 eggs
  • 2 cups shredded mozzerella cheese

Preparation

Step 1

Preheat oven 375F
1- Arrange crescent rolls in pie plate, work dough with your hands to completely fill pan. Spread dough with 2 teaspoons of yellow mustard.Set crust aside.
2- Saute zucchini and onions in marg until soft, about 10 minutes.Stir in spices.
3- Combine beaten eggs and cheese,stir into zucchini/onion mixture.Pour into crust.
4- Bake at 375* for 18-20 minutes (cover with foil for last 8-10 min)
