Ingredients

  • 1 to 2

Packages of Lady Fingers [split]* * see note below for substitution

  • 1

    – 14 ounce Eagle Brand condensed milk

  • 3

Tablespoons Grated Lemon Zest [zest is lemon rind grated/no white portion]

  • 1/3

Cup Lemon Juice [fresh squeezed] --- Do Not Use Less Than Amount Required

  • 1

Pint Whipping Cream [It typically takes me 2 Pints, in order to have topping]

  • Optional: Top with Strawberries [fresh]

Directions

Line the bottom and sides of a 2 ½ quart souffle dish or straight-sided bowl with the Lady Fingers, placing rounded sides of Lady Fingers toward outside of the dish. Set Aside. {Pyrex rectangel cooking dish works well}. Beat the Whipping Cream {when shipping the cream, gradually add a very small amount of sugar}. Set Aside. In a large bowl, combine the Eagle Brand Condensed Milk, Lemon Zest and Lemon Juice. Stir well. FOLD in approximately 2/3 of the Whipped Cream. When completed folding together, spoon this mixture in the dish containing the Lady Fingers. Top with the remaining Whipped Cream. If desired, decorate top with fresh strawberries. You will need to wash, dry and then slice the fresh strawberries, as the whole berry would be weighted down into the cream. Cover and Chil for at least 4 hours prior to serving {over-night best}. Do Not cover with a plastic wrap, use foil. Completely wrap, but leave space – so that foil is not directly sealed on top of the strawberry/cream. Make sure your refrigerator does not contain any foods that have strong orders, as the whipped cream may absorb them. This dessert takes less than 30 minutes to prepare. It should be kept refrigerated until you ae read to serve. If any is left over, it should be immediately returned to the refrigerator. This dessert will last 2 to 3 days only [due to whipped cream[. *If you are unable to find Lady Fingers, then use Sara Lee’s Frozen Pound Cake. Just slice the pound cake in an approximate thickness equal to a Lady Finger and line your serving dish. It is often difficult to find Lady Fingers --- and sometimes they are filled – which you do not want to use.
