Double Lemon Ginger Loaf

Ingredients

  • 2 lemons to produce 5 Tbsp juice and 2 Tbsp rind
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 c butter
  • 1 1/4 c white sugar
  • 2 eggs
  • 2/3 c milk
  • 3/4 c chopped crystalized ginger

Preparation

Step 1

Mix peel with dry ingredients
Beat butter well
Add 1 c sugar and 2 Tbsp juice
Beat
Add eggs one at a time
Add flour alternately with milk
Fold in ginger
Bake in well greased loaf pan for 1 hour
Mix 3 Tbsp juice with 1/4 c sugar and spoon over baked loaf
