lb. 15 count shrimp - shelled, cleaned, tails removed
Grape Tomatoes - 1 pint container or More!
Fresh Oregano - chopped about 1-2T
Garlic - at least 5-6 cloves, crushed.
lemons - juice and zest
Feta cheese - to taste 1-2C crumbled
Scallions - 2-4 sliced into small pieces
C chicken broth - low salt (one can)
butter (opt) 2-3T
S&P to taste
Sautee shrimp with S&P in 1T EVOO until just under cooked..... about 3-4 min. Remove from pan. In that same pan Sautee garlic in 3T EVOO until just fragrant.... let it sit, off heat for at least 5-10 min to flavor EVOO Cook Orzo to box direction, drain, reserve 1C pasta water. Return garlic to heat, add tomatoes, S&P, cook for 1-2 minutes. Add Scallions and oregano and chicken broth. Add lemon zest and lemon juice to taste, I use at least 2 lemons. Bring to simmer and add mixture to cooked orzo. Add butter and pasta water. MIX together. Add shrimp last. I mix in Feta at the table, each to their own taste.
