Tuscan-Style Tilapia

Quick & simple way to cook fish, makes a great tomato sauce. Best served over rice.

Ingredients
- 2 Tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 4 tilapia fillets (about 4 oz each)
- 3 tablespoons olive oil
- 2 cloves garlic, pressed
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 cup chopped olives (I use green)
- 1/4 cup fresh parsley, snipped
- Rice or pasta (if using)

Preparation
Step 1
Combine flour, 1/4 tsp salt, 1/8 tsp cayenne pepper in a shallow dish. Coat fish and shake off excess.
Heat 12 in skillet over med-high heat. Add oil (or spray w cooking spray). Place fillets in skillet and cook 4-6 , turning once. Fish is cooked when flakes w a fork. Keep fillets warm.
Add 1 tablespoon of oil to pan. Add garlic and cook for 30 seconds. Add tomatoes, olives, parsley, remaining salt & cayenne pepper. Heat until slightly condensed. Serve sauce spooned over fillets.
