Ingredients

  • 5 cups heavy cream
  • 1-1/4 cup milk
  • 16 mint leaves
  • 1-1 1/2 packets gelatin
  • 2/3 cup sugar
  • zest of 6 limes (use the fruit segments as garnish when plating)
  • 3 tbsp tequila

Preparation

Step 1

Pour milk and cream into sauce pan, add mint and bring to simmer. Reduce by 1/3

Pour gelatin over cold water to soften about 5 minutes

Strain milk & cream mixture into bowl and add sugar, lime and tequila

Add gelatin and whisk into mixture until it dissolves

Place into pop-out molds and chill for 2-3 hours (freezer)

Pop out of molds and garnish with lime segments and mint leaf
