Grandma Bea's Always Moist Roast Beef
Gram gave me this recipe just a few weeks before she passed away. I took for granted that I could call her when I made it the next time, but I'm going to try to remember exactly what she told me.
- 2-3 lb chuck roast or bottom round roast
- 1 package of onion soup mix
- 1.5 cups water
- ROASTING DISH WITH LID
Preparation time 5mins
Cooking time 180mins
Set oven to 425 and put roast into roasting dish and cook uncovered for 30 minutes.
Move temp down to 325, mix onion soup mix with water (about a cup and a half), pour over roast then cover and cook for 2.5-3 hours. Do not open oven or check roast.
Roast is done when fork tender. Allow roast to rest. Cut AGAINST the grain.
