Ingredients

  • 1 ounce orzo pasta, dry
  • 1 teaspoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon oregano, dried
  • 3/4 teaspoon olive oil, extra virgin
  • 2 tablespoons green onion, chopped
  • 6 tomatoes, cherry
  • 1/3 cucumber
  • 3 ounces shrimp (US or Canada), cooked
  • 5 olives, black
  • 1 ounce feta cheese, low-fat

Step 1

Cook orzo according to package directions; drain and set aside.
In a medium bowl, whisk together the lemon juice, vinegar, pepper, oregano and oil.
Chop onion; halve tomatoes; and peel and dice cucumber.
Toss all ingredients together. Serve warm or at room temperature.
