Ingredients
- 4 large avocados, peeled and pitted (about 2 cups)
- 1 1/2 to 2 cups fresh grapefruit juice
- 2 1/2 cups chicken broth
- 1/2 cup white wine
- Salt and freshly ground white pepper
- 1 small tomato, diced (for garnish)

Preparation
Step 1
In a blender or food processor, puree the avocados with 1 1/2 cups of the grapefruit juice until the mixture is very smooth and thick.
Transfer the mixture to a large bowl and stir in the broth and white wine to thin the texture to a pourable consistency. If the mixture needs a little more tartness, add the remaining juice. Season with 1 tablespoon salt and 1/2 teaspoon white pepper (or more to taste).
In a separate bowl, season the diced tomato lightly with salt. Serve the soup in bowls, cups or mugs, garnished with a spoonful of diced tomato.
