Poached Eggs on Onion Tartlets

Ingredients
- TARTLET:
- 2 lg onion
- 4 Tb butter
- 1/3 c. cream
- 3 Tb goat cheese
- a few sprigs of thyme leaves
- 3/4 lb puff pastry, thawed
- 4 eggs, poached

Step 1
Preheat oven to 400.
Slice onions. Melt the butter in a heavy pan over low heat. Add onions and cook gently for 45 mins. Stir every 10 mins. add cream and thyme, simmer for another 20 mins. Stir in cheese. Set aside to cool
Roll out the dough on a floured surface to 1/8 in thickness. Cut out four disks about 4 1/2 inch and place on baking sheet. Chill for 20 nins.
Prick each disk 4-5 times with fork. Spread onion evenly over disks. Bake 10 mins. Turn oven down to 350 and bake for another 15 mins.
Place 1 warm poached egg on each tart.
