Ingredients

  • 1 pkg. yellow cake mix
  • 1 pkg. (4 serving size) vanilla instant pudding
  • 1 cup canned pumpkin
  • 1/2 cup each oil and water
  • 3 eggs
  • 1 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon pure vanilla extract

Preparation

Step 1

Beat all ingredients with electric mixer on low speed just until moistened. Beat on medium speed 2 minutes. Spoon batter into 24 paper lined muffin cups filling each cup 2/3 full.

Bake in preheated 350 degrees oven 20 minutes. Frost cool cupcakes with spiced cream cheese frosting.

Spiced Cream Cheese Frosting Beat 1 pkg. (8oz) cream cheese softened, 1/4 cup butter, softened, 1 teaspoon vanilla extract and 1/4 teaspoon ground cloves until light and fluffy. Gradually beat in 1 box (16OZ.) confectioners sugar until smoth
