Pasta with Lemon and Peas

Ingredients

  • 1 pound dry fettuccine or spaghetti
  • 3 tbsp extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • Zest of a half of lemon
  • 1/3 cup fresh lemon juice
  • 1- 1 1/2 cups frozen peas
  • 1 tsp kosher salt
  • table grind balck pepper to taste
  • 1/3 cup freshly grated Parmesan

Preparation

Step 1

1. Cook the pasta according to directions.Add the pasta and Peas together to the boiling water.
2.While the pasta is cooking, heat two tbsp of extra virgin olive oil to a large skillet over medium low heat. Add the garlic and lemon zest. Cook until garlic is golden but not browned, about 4-5 minutes.
3. drain the pasta and peas, reserving a bowl full of pasta water.
4. Add pasta and peas to the skillet with remaining olive oil, season with salt and pepper. Add 1/4 cup pasta water to sauce. Add more if needed. Heat until warm. Sprinkle with Parmesan and serve.

Delicious with chicken or Turkey cutlets
