Cranberry-Apple Pork Roast

Ingredients

  • 1 14 oz can whole berry cranberry sauce
  • 1 1/2 tsp grated orange zest
  • 1/4 c orange juice
  • 1/3 c chopped shallots
  • 1 tbsp cider vinegar
  • 1 " section of fresh ginger, peeled and grated
  • 1 tsp dijon mustard
  • 2 lbs boneless pork loin roast, trimmed and patted dry
  • Salt and pepper to taste
  • 2 tart apples, peeled, cored and cut into 1" pieces
  • 1 tbsp cornstarch, dissolved in 3 tbsp hot water

Step 1

Stir together the first seven ingredients in the slow cooker.

Season the pork roast all over with salt and pepper and place in the slow cooker. Spoon some of the sauce over the roast.

Cover and cook on low for 6-8 hrs. or until the pork is fork tender. Add the apples during the last hour of cooking.

Place pork on carving board, tent it with foil, and let it stand for 10 mins before slicing. While the pork rests, stir the cornstarch mixture into the sauce and cook until thickened, about 10 mins.

Serve the pork slices with a spoonful of sauce and apples on top. Offer the remaining sauce on the side.
