Mushroom Stuffed Cornish Game Hens

Ingredients
- 4 cornish game hens thawed , rinsed and dried
- 1 1/2 lb button mushrooms
- 2 TBS minced onion
- 1/2 cup butter
- 1/2 tsp tarragon
- salt and pepper
- 1/2 cup white wine
- Lemon juice
- 4 strips lean bacon

Preparation
Step 1
Trim mushrooms and chop fine.
Saute onion in butter until tender
Stir in mushrooms and cook on low heat stirring frequently until tender.
Season with tarragon, salt and pepper.
Add wine and cook until mixture forms a heavy paste. Remove from heat
Spoon mushroom mixture into cavity of each bird; truss birds rub skins with lemon juice.
Drape a slice of bacon over each breast of hen.
Bake at 400 degrees 34-45 minutes basting frequently with additional wine
