Ingredients
- 1 teaspoon Dijon mustard
- 2 tablespoons cider vinegar
- 2 tablespoons vegetable oil
- 1 can black-eyed peas (15 oz) -- drained and rinsed
- 1 package frozen corn kernels (10 oz) -- thawed
- 1 each red bell pepper -- ribs & seeds removed, finely diced
- 2 each scallions -- thinly sliced
- coarse salt and ground pepper

Preparation
Step 1
In a medium container, whisk mustard, vinegar, and oil. Add all
vegetables. Season with salt and pepper; toss to combine. If making ahead,
store in refrigerator covered.
