Ingredients

  • 1 teaspoon Dijon mustard
  • 2 tablespoons cider vinegar
  • 2 tablespoons vegetable oil
  • 1 can black-eyed peas (15 oz) -- drained and rinsed
  • 1 package frozen corn kernels (10 oz) -- thawed
  • 1 each red bell pepper -- ribs & seeds removed, finely diced
  • 2 each scallions -- thinly sliced
  • coarse salt and ground pepper

Step 1

In a medium container, whisk mustard, vinegar, and oil. Add all
vegetables. Season with salt and pepper; toss to combine. If making ahead,
store in refrigerator covered.
