Chicken with sun-dried tomato cream sauce

Ingredients
- 2 boneless chicken breasts
- 1 T olive oil
- 1 clove garlic
- 1 onion, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/8 t red pepper flakes
- 1/4 cup dry white wine
- 3/4 cup chicken broth
- 2 cups mushrooms
- 1/4 cup heavy cream
- 1/4 cup fresh basil, chopped

Preparation
Step 1
1. Heat oil in a pan and brown chicken on all sides. Remove from pan and transfer to a plate.
2. Add garlic, onion, red pepper flakes, sun-dried tomatoes and saute in the same pan for about 5 minutes.
3. Add white wine to pan, scraping up brown bits. Cook until reduced in half.
4. Add chicken broth and mushrooms. Bring to a boil and cover.
5. Add chicken back to skillet and simmer covered until cooked.
6. Add cream and cook until thicker. Add flour if necessary to thicken.
7. Add basil and serve over rice or couscous.
