Celery Root Apple Slaw with Pecorino, Parsley & Pine Nuts

Ingredients

  • 1 celery root, peeled, quartered & cut into julienne
  • 2 Granny Smith apples, cut into julienne
  • 1 1/2 C loosely packed Italian parsley
  • Flaky sea salt
  • 4 oz. Pecorino or Manchego, shaved
  • 1/2 C EVOO
  • 1/2 C lightly toasted pine nuts
  • 2 t apple cider vinegar (more to taste)
  • Ground pepper

Preparation

Step 1

Put celery root, apple & parsley in large bowl. Crumble 1 t salt into bowl & toss. Add most of the cheese, oil, nuts, vinegar & several grinds of pepper. Season to taste with vinegar & salt. Serve right away, drizzled with more oil, additional pepper & remaining cheese.
