Celery Root Apple Slaw with Pecorino, Parsley & Pine Nuts

Ingredients
- 1 celery root, peeled, quartered & cut into julienne
- 2 Granny Smith apples, cut into julienne
- 1 1/2 C loosely packed Italian parsley
- Flaky sea salt
- 4 oz. Pecorino or Manchego, shaved
- 1/2 C EVOO
- 1/2 C lightly toasted pine nuts
- 2 t apple cider vinegar (more to taste)
- Ground pepper

Preparation
Step 1
Put celery root, apple & parsley in large bowl. Crumble 1 t salt into bowl & toss. Add most of the cheese, oil, nuts, vinegar & several grinds of pepper. Season to taste with vinegar & salt. Serve right away, drizzled with more oil, additional pepper & remaining cheese.
