cups cauliflower florets (about 2 lbs cauliflower)
Tbsp butter or as needed
Tbsp half and half or as needed
1. Break cauliflower into equal size florets. Place in a saucepan in about 2 inches water. Simmer over medium heat 20 to 25 minutes, or until cauliflower is very tender and falling apart. (Check occasionally to make sure there is enough water to prevent burning; add water if necessary.) Drain well. 2. Place cooked cauliflower in food processor or blender. Process until almost smooth. Add butter. Process until smooth, adding cream or more butter as needed to reach desired consistency. Salt to taste.
