Tortellini & Spinach Soup

Ingredients
- 2 C. water
- 4 T. ham base
- 28 oz. vegetable broth
- 1-16 oz. pkg cheese tortellini
- 2-15 oz. cans of cannellini beans, rinsed and drained
- 1-14 oz. can of diced italian tomatoes, undrained
- 1-2 cups shredded rotisserie chicken
- 1/4 tsp salt
- 1/8 tsp pepper
- 4 C fresh baby spinach, chopped
- 3 T. minced fresh basil
- 1/4 C. shredded asiago cheese

Step 1
In a large saucepan, bring broth, ham base and water to a boil. Add tortellini. Reduce heat and simmer, uncovered for 5 minutes. Add beans, tomatoes, chicken, salt and pepper.
Cook until tortellini are tender. Stir in spinach and basil and cook until wilted. Top servings with cheese.
