Bacon Roll-Ups

I usually double this recipe. Also allow time for sausage mixture to cool (about an hour). Recipe makes 16-17 inch balls.

Ingredients
- 2/3 pound sliced bacon
- 1/4 cup butter
- 1/2 cup water
- 1 1/2 cups herb stuffing mix
- 1 egg, beaten
- 1/4 pound pork sausage

Preparation
Step 1
Cut bacon slices in half. Melt butter and add water; heat to boil.Remove from heat; stir in stuffing mix. Add egg and sausage; mix thoroughly. Chill sausage mixture for about an hour for easier handling.
Shape sausage mixture into balls. Wrap each ball in bacon half-slice, securing it with a toothpick. At this point roll-ups may be frozen.
To serve: Bake just-made roll-ups at 375 degrees 35 minutes. Bake frozen roll-ups in single layer on sheet pan 40-45 minutes.
