Ingredients
- 4 boneless skinless chicken breast halves.
- 2 lemons
- 3/4 c. chicken broth
- 2 T capers, drained and rinsed
- 2 T. butter
- 2 c cooked broccoli
- 2 c. cooked brown rice

Preparation
Step 1
Heat 3 T oil. Saute chicken 10 min, turning once. Move to platter, S and P.
Add juice and zest from 1 lemon to pan. Boil Med. 1 min., stirring.
Add broth and cook 2 min.
Add capers and butter. Simmer 1 min.
Tpo chicken with sauce. Serve with broccoli and rice.
Use other lemon as garnish (wedges)
