Cauliflower Au Gratin with Bacon

Ingredients
- 1 Large Head Cauliflower, cut into small florets
- 1 Jar Alfredo Sauce, low Carb (about 2 cups)
- 1/4 Cup Bacon, fried crisp
- 1/4 Cup Almond Meal or Italian Breadcrumbs
- 1/4 Cup Parmesan Cheese, grated

Step 1
Preheat oven to 425 degrees. Boil cauliflower florets in large pot of boiling salt water; simmer for about 3 minutes. Strain the cauliflower to remove all water. Heat alfredo sauce in large saucepan. Stir the cauliflower into the afredo sauce. Add the bacon pieces. Once the cauliflower is evenly coated with the alfredo sauce, pour it into a greased baking dish (9 x 13 inch). Dust the top with almond meal or breadcrumbs. Sprinkle Parmesan cheese on top. Bake for approximately 15-20 minutes or until the top is toasty brown.
