Ingredients
- Crust:
- 4.3 oz AP
- 1 T Sugar
- 1/4 t S
- 2 oz butter-cold-diced
- 1 Egg
- 1-2 T ICE water
- Filling:
- 16 fl oz pumpkin puree
- 12 fl oz evap. skim milk
- 1 egg
- 2 egg whites
- 3 oz sugar
- 1 t cinnamon
- 1/2 t nutmeg
- 1/4 t allspice

Step 1
1. butter pan
2. prepare crust
3. press into pan and blind bake until set, not brown. let cool
4. mix together all filling ingredients, whisking until smooth. pour into crust
5. bake tart 10 minutes at 400 reduce to 325 and bake 40-50 minutes or until set and a pairing knife comes out clean
6. cool in pan completely, remove and chill
