No Sugar Strawberry Jam


My daughter is on an organic diet with no processed sugar so (Like a Good Daddy) I made her some jam during strawberry season that is AWESOME

  • 7 Cups mashed strawberries
  • 1 1/2 Apples Grated (unpeeled)
  • 1 3/4 Cups Honey
  • 1 1/4 TBS Lemon Juice

Preparation time 20mins
Cooking time 180mins


Step 1

1-Put a ceramic plate in the refrigerator
2-Mix all ingredients in a large pot over high heat
3-As mixture begins to boil and soften mash with potato masher
4-Reduce heat and simmer for 1-2 hours until the jam will is relatively solid when placed on the cold plate (NOTE: THIS WILL NOT BE AS SOLID AS JAM MADE WITH SUGAR AND CANNING PECTIN, but it's PLENTY solid enough for jam and EXCELLENT)
5-Can as usual with 10 minute boil or should store well in refrigerator for 3-4 weeks
