    teaspoons cinnamon

    teaspoon baking powder

    teaspoon salt

    cup nuts -- optional

    cup powdered sugar

  • 8

    ounces cream cheese -- softened

  • ¼

    cup butter -- softened

  • 1

    teaspoon vanilla

Directions

*Beat eggs at high speed 5 minutes, Gradually add sugar, pumpkin, and lemon juice set aside *Mix together all dry ingredients accept the nuts,Gradually add to egg mixture, mix well *Grease and flour 10x15 jelly roll pan spread mixture in pan, top with nuts if desired *Bake at 375 for 15 minutes Quickly turn over onto a lint free tea towel, sprinkle with powder sugar roll up with tea towel , let cool completely FILLING *Cream together Powdered sugar, cream cheese, butter, and vanilla well until smooth *Unroll Pumpkin roll a little bit at a time and spread cream cheese filling until covered *Roll pumpkin roll back up and refrigerate, sprinkle with powder sugar when serving
