Balsamic Roasted Sweet Potatoes & Squash

Ingredients

  • 2 large sweet potatoes, chopped
  • 1 medium squash, chopped
  • 2-3 tbsp olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp fresh rosemary, minced
  • 1 tsp salt
  • 1 tsp pepper

Step 1

Preheat oven to 400F.

In a large bowl, combine all the ingredients and toss. Spread out on 9x13 inch baking pan and roast in oven for 40-50 minutes or until vegetables can be pierced easily with fork and top is golden brown.
