Ingredients
- Rind from 2 large oranges
- Water
- 1/2 Cup Sugar
- 1/3 Cup Boiling Water
- 1 Egg
- 1 Cup Milk
- 2 Tbs. Melted Shortening
- 3 Cups Flour
- 1 Tbs. Baking Powder
- 1 tsp. Salt

Step 1
Cut rind in short, narrow strips, or grate coarsely. Cover with water and boil until tender. Drain. Add sugar and 1/3 cup boiling water to rind. Boil approximately 20 minutes, stirring constantly. Remove from heat. Cool. Beat egg. Add milk and shortening. Add cooled orange mixture. Combine dry ingredients and add to liquid ingredients. Mix lightly but thoroughly. Pour into a well-greased bread pan. Bake at 375 degrees for 45-50 minutes. Makes one loaf.
